Billy's Classic Brazil Fazendas Diamante Natural Red & Yellow Catuaí

Billy was our family and café dog, passed away in 2024. We had decided that one day one of our coffee's will be in his memory. This is our first coffee from our roastery and it felt natural to name it in his honour.

This is our classic house beans that for us represents a good medium roasted espresso and filter brew, with characters reminding of chocolate, almond, roasted nuts. 

It's a medium roast profile containing 100% arabica from Brazil to give that classic touch.

For a double espresso recipe we recommend 18 grams of coffee to be extracted for about 24-26 seconds and an output weight of about 45 grams.
